Kale has become one of those veggies that I always have on hand. It’s such a versatile green that can be used in so many different ways. For dinner one night I created this recipe out of curiosity (this is probably 75% of how my recipes get made), wanting to add some more veggies to my meal, and lucky for me it all worked out. This recipe has quickly become one of my most popular on Laugh Eat Learn.

This is by far a favorite recipe and perfect side dish to any meal. It's packed full of healthy goodness with the kale, and the potatoes are a great bind. This recipe is quick and easy and so healthy!

Like I said, this side dish come out of no where but paired perfectly with the other components of my dish. It’s pretty easy to make and gives you potatoes an extra boost of veggies. The directions for this are quite simple and everything can be made in one pot with the use of a food processor or blender. Add a little parmesan cheese and you’re ready for a great night!

Kale & Potato Purée

Ingredients
  • 3 Large Potatoes
  • 3 Cups (or more) of Kale
  • 2 Tablespoons Butter
  • 1 Cup of Milk (I use non-fat)
  • Parmesan Cheese
  • Salt & Pepper to Taste
Instructions
  1. Set up a pot of boiling water, you will use this for both your kale and potatoes.
  2. Rinse your kale and roughly chop it into smaller pieces. Blanch your kale in the boiling water for a few minutes, about 5, enough time to cook the veins. Ladle out (don't strain the water!) the kale into ice cold running water in a bowl. Set aside to cool.
  3. With the same pot, add your chopped potatoes, cook like you would when making mash potatoes. While the potatoes are cooking, in a food processor, combine the kale, milk and Parmesan cheese. Pulse until it is chopped up. Drain the potatoes, putting them right back into the pot. Add the butter, salt and pepper.
  4. Mash potatoes and slowly add in the kale mixture, mashing it in with the potatoes.
  5. Cook for a few minutes to heat the kale mixture back up, top with Parmesan cheese and ENJOY!
