Weekend Away Steak & Potatoes

While we went away for the weekend, I made this wonderful simple steak and potatoes. They both complement each other in this easy to follow recipe. It's a perfect meal for a love one or a special night.
Jonathan and I headed up north for the weekend to celebrate our anniversary (one last time!) and stayed in his parents timeshare. We were lucky enough to land a room with a kitchen and all the essentials needed to make a meal. We decided right away to grocery shop when we first arrived to town and get everything we needed for the weekend so we could focus on relaxing (plus with only two restaurants open in the town, we didn’t want to eat fish and chips everyday!). I decided to make a easy but delicious dinner that night with steak, baked potatoes and broccolini!

Steak and potatoes is such a classic combo and one of our favorites. I would say I’ve perfected my steak process over the last few years and now feel really great making a good steak. The key for me is salt/seasoning. Don’t be afraid to season your steak. If you think it’s a lot on there, put a little more!

Special Steak & Potatoes

Ingredients
  • 2 Steaks of your choice (We got New Yorks)
  • 2 Potatoes
  • 1 Bunch of Broccolini
  • ½ Stick of Butter
  • 1 Onion
  • 4-5 Garlic Cloves
  • Emeril's Steak Seasoning (or Something Similar)
  • Salt & Pepper
  • Potato Toppings (We had Sour Cream and a Dill & Garlic Cheddar Cheese, Mmm!)
Instructions
  1. Do all your prep before cooking, trust me it saves time in the long run!
  2. Turn on the oven to 350 degrees. Begin by prepping your potatoes because these will take the longest to cook.
  3. Choose your own way or do it like I did by rinsing, poking with a fork and rubbing with butter and salt. Stick these in the oven, you can check for done-ness by continuing to poke with a fork throughout cooking process.
  4. Chop the ends off the broccolini and rinse off, set aside. Mince your garlic and chop your onions into ringlets.
  5. Lastly, prep your steak by simply putting good amount of steak seasoning. When I say a good amount, I mean cover the entire top with it, trust me, the steak needs it!
  6. Start off with your onions, put a little butter at the bottom of your pan, toss the onions in there with a little salt and pepper. Sweat these out, stirring every once in a while for about 5-10 minutes.
  7. Next, layer the garlic on top of sweated onions, then top with broccolini. Cover and turn to low!
  8. Next, butter up (sense a theme?) your oven safe pan. Get it nice and hot, medium-high heat then put your steaks in. If you are doing a thicker steak like ours, do not move them for 2-3 minutes, you want that nice crust on there. Flip over, sear for another 2-3 minutes then stick the whole pan in the oven! I topped ours with some butter before sticking it in.
  9. Keep your steaks in there for another 5-7 minutes. Take it out of the oven, transfer steaks to a resting plate for another 3-5 minutes. Prep your potatoes, slice your steaks up, add your broccolini and ENJOY!
