Sausage & Polenta
- 2 tablespoons of olive oil
- 1 tube of polenta sliced into rounds
- ½ pound of Italian sausage
- 1 {28 oz.} can of diced tomatoes
- ½ cup of mozzarella cheese (sliced or shredded)
- Salt & Pepper
- Parmesan Cheese
- Heat the olive oil in a nonstick pan on medium-high heat and pre-heat oven to 400 degrees. Slice the polenta into rounds while it is heating.
- Fry the polenta until golden, flipping over to fry the other side too. Place the polenta on a plate and set aside.
- Add the sausage to the same pan, breaking it up and cooking thoroughly.
- Stir in the diced tomatoes, add salt and pepper and let it boil together.
- After the sauce has reduced slightly, remove from the heat.
- Transfer the sausage and tomatoes into a oven safe pan, layering the polenta rounds on top then adding the mozzarella on top.
- Cook in the oven for another 5-10 minutes to melt the cheese and mend the flavors.
- Top with parmesan cheese and ENJOY!
