Spiced Apple Cheesecake Muffins

Ingredients
Muffin
  • 1 Box Spice Cake Mix
  • Water (Per cake mix directions)
  • Applesauce (To replace vegetable oil portion of cake mix directions)
  • 1 Apple (Peeled & Cored)
Cheesecake Filling
  • 1 Package Cream Cheese (8 Ounce, Room temperature)
  • ¼ Cup Sugar
  • 1 Egg
  • ½ Teaspoon Vanilla
Instructions
  1. Preheat oven to 350 degrees and prep your cupcake pan with liners.
  2. Peel, core, and dice your apple into small pieces. Place half of the apples in a medium mixing bowl. Divider up the second half of the apples into each of the cupcake liners and smooth so they cover the bottoms without overlapping on each other.
  3. In the mixing bowl, follow the directions per your Spice cake mix. Substitute equal parts vegetable oil for applesauce. Mix the mixture and divider evenly into cupcake liners.
  4. In another mixing bowl, combine room temperature cream cheese and sugar until mixed well together. Add the egg and vanilla and mix together to combine. Grab a piping bag (or let's be real, a ziplock) and add the cream cheese mixture to the bag. Trim the corner to use.
  5. Pushing slightly into the spice cake mixture from the center, put a dollop of cheese into each cupcake. No need to smooth out as they will do that once baked.
  6. Bake for 18-22 minutes or until toothpick comes out clean. Garnish with a piece of apple, grab a latte, and ENJOY!
