Friendsgiving & Chicken Recipe!

Ingredients
  • 1 (5 to 6 lb) whole chicken
  • Salt & Pepper
  • Italian Seasonings
  • 4 Lemons
  • 4 Garlic (whole)
  • ½ cup Chicken Stock
Instructions
  1. Preheat oven to 425 degree.
  2. Remove all the parts from the inside and rinse the chicken off. Pat the outside dry with a paper towel. Liberally salt and pepper the inside and both sides of the chicken. Toss Italian Seasoning all over chicken as well.
  3. Cut lemons and garlic in half.
  4. Stuff the chickens cavities with both even parts of lemon and garlic. Place chicken in roasting pan. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Scatter the remaining garlic and lemon around the roasting pan.
  5. Roast the chicken for 1 hour. Bast the chicken stock over the tops and inside of the chicken. Lower the temperature to 400 degrees.
  6. Continue to check the chicken over the next 45-60 minutes, basting each time. You will know it's done when you cut between a leg and thigh and the juices run clear.
  7. Garnish with lemons on your platter and enjoy!

When feeding for a crowd, I double the recipe!
